Ingredients
- 1 stick of unsalted Butter
- 4 Lge Red Onions, sliced thinly
- 4 Tbsp of Minced Garlic
- 2 Bay Leaves
- 1 whole scotch bonnet pepper
- 4 Fresh Thyme sprigs (the leaves & stem)
- Sea Salt and freshly ground Black Pepper
- 1/4 cup Worchester Sauce
- 3 heaping tablespoons Bisquick Flour
- 2-packages of dry onion soup
- 1 quart of water
- 1 quarts beef broth
- 4 slices of whole grain bread
- 1 pound grated Jarlsberg Cheese (SAMS Club sells it)
Directions
Melt the stick of butter in a large pot over medium heat. Add the onions, garlic, thyme, and salt and pepper and cook until the onions are very soft and caramelized, about 20-25 minutes. Turn down the stove to medium, then add the Bay Leaves, sprinkle the Bisquick stir it in until it dissolves and it is light brown about 5-minutes or so. Now add the beef broth, onion soup, water, whole scotch bonnet pepper and Worchester Sauce, let the soup come up to bubbling, stir. Turn the stove down low, cover to allow the soup to simmer, and cook for about 15-20 minutes. Discard the bay leaves, pepper and thyme sprigs.
Preheat the broiler to lightly toast the whole grain bread slices on a baking sheet in a single layer to lightly toast. Then place the bread into 4-individual Stoneware or Corning ware dishes. Equally fill with the caramelized onions, the beef broth, and add a generous portion of the Jarlsberg Cheese and broil until bubbly and golden brown for about 3- 5 minutes.
